Blog Post:  Coffee is brewed from ground coffee beans. These beans come from little red cherries that grow on coffee trees. These trees are often grown on plantations located in tropical areas near the equator. The cherries are harvested and washed, removing the outer part of the cherry, leaving only the inner bean. The beans are dried, packed in bags, and shipped to a roaster.

Coffee beans are roasted as light, medium, or dark roasts. Different varieties of beans are roasted to different degrees. The coffee beans are then ground for the type of coffee desired. The ground coffee is sold as Turkish, espresso, fine, or specialty grinds. Coffee roasters often have their own blend of beans and grind settings to market their brand. Today we find ground coffees in bags, pods, and cups. Also available are decaffeinated coffees and flavored coffees. Coffee may be served hot or cold, optionally with cream and/or sugar. Some coffee connoisseurs add various syrups and flavorings to their coffee beverages.

Blog Post:  Chocolate is made from cocoa beans that have been roasted and ground. To make chocolate for eating, cocoa butter, sugar, and perhaps a flavoring are combined, and the paste is put through a series of rollers to further refine it. Quality chocolate is then the put through a conching machine to further smooth the chocolate. The chocolate is then tempered in kettles and molded.

Types of chocolate include bittersweet, semi-sweet, and milk chocolate, all of which can be molded into bars or chocolate chips, used as a coating around a filling, or mixed with nuts, fruit, etc. to form candy. Pastry chefs may also use it for piping and decoration or to make a chocolate sauce.

Blog Post:  Cocoa is a powder manufactured from cacao beans. Cacao beans grow in large pods on cacao trees, which are native to tropical areas of the world. After harvesting, cacao beans are allowed to ferment. They are then dried and roasted to develop flavor. The resulting dehydrated beans are ground into a "liquor" mass, and the cocoa butter is extracted from the mass. The residue is made into cakes, which are ground into cocoa powder. Cocoa powder is most often used for baking or in drink mixes.

Blog Post:  Grains are the edible fruits clustered at the top of grassy plants such as wheat, rice, barley, and oats. The exception is corn, which grows on ears that grow on the plant stem. Once mature and dried, the fruit becomes a hard "seed" that can be used whole or refined. This grain may be used in various forms such as a baking ingredient or cooked as a hot cereal or porridge.

The most important grain crop is wheat. Used as wheat berries, flakes, cracked wheat, or bulgur wheat, it may also be processed to remove the wheat germ and wheat bran for other baking purposes. Couscous is another product that is made from milled durum wheat. Semolina is made from the wheat kernel. Milled wheat is most often made into bread, crackers, cakes, or pastries.

Rice is the primary grain that is grown and used in much of Asia, Africa, and Latin America. It follows wheat as the second most cultivated crop worldwide.

Blog Post:  Corn is a familiar grain that grows primarily in warm climates. It may be white or yellow and is processed to form ground corn, polenta, hominy, or grits. Popcorn, a special variety of corn, can be heated and popped to form a favorite snack.
